This pandemic has offered a lot of time for reflection. In a matter of weeks, COVID-19 has completely disrupted the food supply chain and revealed just how unhealthy our commercial meat industry for humanity and for the planet. As stay-at-home orders began rolling out, panic set in. Meat processing plants closed, grocery aisles were emptied, and the farm-to-fork food chain saw links start to snap and prices start to rise dramatically.  At DOS, we are renewing our commitment to reclaiming our food system - starting with healthy protein. We want to support our local ranchers and our customers’ health and well-being. You will taste the difference.

FAMILY

John Nieslanik, the founder of Nieslanik Beef, grew up as one of 12 siblings on a ranch in Spring Valley near Carbondale, Colorado.  In 1957, after returning from the Korean War, he began buying land on East Mesa in Carbondale. There he would start his own ranching operation. In 1960, John purchased the beautiful 166 acres of fertile land that has since become the home base of Nieslanik Beef.  He and his wife raised four boys on the ranch.  John's son Marty, (with the support of wife Jerilyn) took up the reins of Nieslanik Beef. Their children Parker (with wife Cara) and Johnny are now helping drive the family business into the future. Today, Nieslanik Beef is proudly in its third generation of continuous homegrown operations in Carbondale, Colorado.

CATTLE

Our cattle are an Angus / Simmental mix.  The quality of Nieslanik Beef's meat is a direct reflection of the care with which we treat our cattle.  In the winter and spring, our herd feeds on a mixture of hay we grow and put up each summer. During summer and early fall, Nieslanik cattle graze high nutrient vegetation in the beautiful high country surrounding Carbondale, Colorado. They come home happy and healthy in the fall and we finish them on our unique mixture of homegrown grasses and grains. They are full sized and ready to go after their second summer in the high country and their fall finishing at home on Nieslanik Ranch. Our family is focused on building and maintaining a healthy herd around the clock... 365 day's a year. These efforts result in fantastic living conditions for our cattle.... and the high quality beef products Nieslanik Beef brings to market.

CONSERVATION

At Nieslanik Beef, proper land stewardship is one of our core values.  In 2005, John Nieslanik and his sons Mark, Marty, Matt, and Mike solidified their commitment to the future of their land.  The family worked with Aspen Valley Land Trust to secure a conservation easement on 166 acres of Nieslanik Ranch.  In doing so they took the lead in preserving one of the Carbondale community's most spectacular panoramic views. Today, visitors to Carbondale's White Hill enjoy an unspoiled view that spans "The Crown" and "East Mesa" to the east, Mt. Sopris and the Crystal River Valley to the south, Thompson Divide to the west, and continues all the way to Red Hill north of town. Nieslanik Beef is proud to have played a part in setting aside a piece of Carbondale's historic and cultural character for generations to come.
